Purple quinoa

Quinoa is a complete source of protein and is high in fiber.  Fiber is great for appetite control and helps to reduce blood pressure and cholesterol

Serves 1


3oz quinoa (85g)

2 Beets (Peeled and Grated)

3.5oz frozen Peas (100g)

1oz Low-Fat Feta cheese-crumbled (30g)

1 cup of Vegetable Broth (250ml)


1. Boil the vegetable broth and add the quinoa and beets. Simmer for 15-20 minutes.

2. In the meantime, boil the frozen peas in a separate pan of water for 4 minutes and drain.

3. Transfer the purple quinoa and peas into a serving bowl and sprinkle the crumbled feta. Serve warm.
