Baked Spicy Sweet Potato Burgers

Ingredients (Makes 8 Burgers)


1 cup sweet potato (200g)

1 onion (100g)

2 chilli pepper

2 garlic cloves

1 carrot (100g)

2 cornichons/gherkins (25g)

1 cup canned chickpeas (200g)

2 tbsp chickpea flour (30g)

1/2 cup frozen sweetcorn (100g)

1/2 cup cooked brown rice (125g)


1 tsp paprika (5g)

1 tsp turmeric (5g)

2 tsp italian herbs (10g)

1 tbsp tomato ketchup (15g)


1) Chop the sweet potato into cubes and place in a pot with 3 cups of water. Bring to boil and simmer for 30 mins.

2) In the meantime, chop the onion and garlic thinly and place them on an oven tray. Bake for 30 mins at 425 degrees F (220 degrees C or gas mark 7)

3) Separately (or together with the sweet potato) boil the frozen sweetcorn together with the cooked chickpeas for 5 mins. Again, bring to boil and simmer.

4) Grate the carrots, chop the gherkin and mix this with the remaining spices and cooked brown rice. Set aside.

5) Once stages 1, 2, and 3 are complete, drain them and add this to the carrot and spice mixture. Using your hands or a masher, combine the ingredients.

6) Divide into 8 medium patties or 10 small, and position on foil or a baking tray. 

7) Place in the oven at 425 degrees F, (220 degrees or gas mark 7) and cook for 25mins. Then turn over and cook for a further 25 mins.

Tip: Try topping the burger with a slice of fresh tomato, avocado, ketchup and hot mustard, all wrapped in crunchy lettuce.
